One Pot, Fourteen Cooks

We are a Nigerian kitchen on Aminu Kano Crescent. We cook to order, we buy our own pepper, and we have never once served a plate we would not eat ourselves.

How it started

A Folding Table and One Pot

In 2014 it was a folding table outside a shop on Aminu Kano Crescent, one pot of jollof, and a queue that formed because the smoke carried. We sold out by two most days, which sounds like a boast and was actually a problem.

The table is gone and the pot is bigger. What did not change is the part people assume we cut first: we still cook the rice over open flame, we still pound yam by hand, and we still buy pepper at Wuse Market on Tuesday mornings rather than taking a delivery from someone who chose it for us.

Twelve Years, Abridged

  1. 2014

    The table

    One pot, three cooks, and a spot on Aminu Kano Crescent borrowed from a friend who sold recharge cards.

  2. 2017

    Four walls

    We took a small unit two doors down and put in the first proper grill. Twenty-two covers, mostly lunch.

  3. 2020

    Riders

    The year everyone ate at home. We bought insulated bags before we bought new chairs, and the delivery side has run ever since.

  4. 2024

    The kitchen now

    Fourteen cooks, twenty-eight covers, trays going out to Maitama and Gwarinpa daily, and the grill still where customers can see it.

How we work

Four Rules We Do Not Bend

Cook it when it is ordered

Nothing sits under a heat lamp waiting to be wanted. It is why a tray takes the time it takes, and why it arrives tasting like it left the pot ten minutes ago.

Buy the pepper ourselves

Tuesday mornings at Wuse Market. A supplier picking for us picks on price, and you can taste the difference in a stew within a week.

Pound the yam by hand

The machine gets the texture wrong and everyone who grew up on it knows immediately. So we do it the slow way, every morning.

Send nothing we would not eat

If it would not go to our own table it does not go in a bag. That costs us a few plates a week and it is the cheapest thing we buy.

Careers

We Are Usually Hiring

Line cooks, grill, prep, and riders who know Abuja properly. No formal experience needed for prep; for the grill we will ask you to cook something. Pay is monthly, food on shift is on us.

Send a note saying which role and where you have worked. If nothing is open we keep it on file and call when something is.
